Apple​ ​and​ ​Flax​ ​Pancakes

Ingredients:

● Flour (1 1⁄4 Cups)
● Pared and Shredded Apple (1 Cup)
● Ground Flax Meal (1⁄3 Cup)
● Sugar (3 Tablespoons)
● Baking Powder (1 Tablespoon)
● Salt (1⁄2 Teaspoon)
● Cinnamon (1⁄4 Teaspoon)
● Nutmeg (Pinch)
● Eggs (2) (Separated into Yolk and Whites)
● Milk (1 1⁄4 Cups)
● Canola Oil (2 Tablespoons)

Instructions:

● Combine flour, flax, sugar, baking powder, cinnamon, and
nutmeg into a large bowl.
● In a separate bowl, lightly beat together egg yolks, milk, and
oil.
● Mix and stir until combined.
● Add shredded apples and stir.
● Fold in beaten egg whites.
● Lightly spray griddle with cooking spray.
● Apply medium heat.
● Using a 1⁄3 Cup, pour batter onto pan.
● Cook for about 1 minute and flip until brown on both sides.
