Greek butter cookies

In Mrs. Cottrill’s English 9 honors class I clearly remember the assignment for cooking one of the items for the Greek feast after finishing the epic poem, The Odyssey. Although I couldn’t bring it into class, due to the pandemic in the 2020-2021 school year, I had to submit photos. These cookies tasted amazing and looked nice too! They are perfect for a winter day or a Christmas dinner. Here is the recipe, provided by Allrecipes.

Ingredients

  • 1 cup of softened butter
  • 3/4 cup white sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 cup confectioners’ sugar (for dusting)

Directions

  1. Preheat oven to 400 degrees and grease a cookie sheet.
  2. Beat the butter, sugar, and egg together until smooth. Stir in the vanilla or almond extract. Blend in the flour until it makes a soft dough. Take about a teaspoon of dough and roll into balls, logs, or “S” shapes. Place cookies 1 to 2 inches apart on the greased cookie sheets.
  3. Bake in the preheated oven until the edges are golden, approximately 1

  4. Allow the cookies to cool before dusting with confectioners’ sugar.
